If you are vegan or just having a detox period, the following recipe can be a surprise for the ones you are cooking for. Don’t stop reading just yet, because it truly is a dessert. Even if it’s not a quick recipe, I am publishing it because it is tasty and unique amongst the more classic desserts.

Ingredients:

  • 400g red kidney beans (or any black or red beans)
  • 2 spoons of orange juice
  • 1 teaspoon vanilla extract (preferably natural)
  • 100 g cocoa powder
  • 1 teaspoon baking powder- there is also an organic option made out of corn
  • ½ teaspoon of baking soda
  • ½ teaspoon of salt
  • 120 ml coconut oil (heat up in a pan and then measure)
  • 5 vegan “eggs” (try flaxseeds: grind 5 spoons of flaxseed with 10 spoons of water and stir till it becomes a paste). If you don’t have flaxseeds use the water from the can of beans (15 spoons beaten like egg whites). If this seems too complicated, you can use regular egg whites, it will still be tasty, but not vegan or for detox purpose.
  • 180 g of coconut sugar. Coconut sugar is a bit controversial but I’m not going to discuss this now. If you want to be sure it’s vegan use coconut sugar or an unrefined sugar that has a vegan label, because sometimes in the production process of the normal sugar ash from cow or pig bones is being used.
  • Optional: coconut flakes for decoration

Preparation:

  • Preheat your oven to 180 degrees Celsius
  • In a blender, put the beans, orange juice, vanilla extract, and the equivalent of a vegan “egg” and mix till you get a smooth paste
  • Slowly add the coconut oil (heated up so it becomes liquid) and sugar till we get a fluffy consistency
  • Add the rest of the vegan “eggs” and mix in intervals
  • In a separate bowl, mix the cocoa powder, salt, baking soda, and baking powder
  • Add the cocoa powder mix over the bean paste and mix to incorporate
  • Grease a cake pan (with coconut oil for example) and add the cake mix
  • Bake for around 40 minutes (but check after 30 because it may vary between ovens). Use a toothpick to check if the cake is done
  • Take the cake out on a plate and decorate with the coconut flakes
  • Leave to cool for about an hour

PS: Don’t tell others what the cake is made of when trying it, so they can appreciate the taste without judging first, then reveal the main ingredient.
