Below you will find an alternative to cooking tofu. Otherwise, if you are not vegan, I believe that the classic scrambled eggs are easier to make and tastier.  

Time of preparation: around 10 minutes

Ingredients:

  • 100 g Tofu (from a block that usually has 200g, so half)
  • 1 teaspoon of coconut oil
  • Half an onion or green onion, finely chopped
  • Half a red pepper finely chopped (or a quarter if you have a bigger one). You can also use tomato instead, or sundried tomatoes.
  • Half a teaspoon of turmeric
  • Half a teaspoon of paprika
  • Salt and pepper to taste
  • Some herbs to decorate at the end

Preparation:

  • Heat a non-stick pan and add your coconut oil
  • Pat dry the tofu to remove any excess water and crumble it into a bowl
  • Add your condiments (salt, pepper, paprika, turmeric)
  • Add the onion and the red pepper to the pan and let them cook for around 1 minute just so they get soft, then add the crumbled tofu
  • Cook for around 5 minutes and stir from time to time- just like cooking scrambled eggs
  • Add to a plate and decorate to your liking.
